Another proposal, the perfect egg with Burgundy, slow cooking, arrives on a nest of sweet onions and reveals an exquisite finesse. The scallops, just snacked and erected on a fray of leeks with a cloud of smoked haddock and a thin tile with squid ink, are a success.
